Easy to Assemble Snack Ideas
Veggies Sticks (like celery and bell pepper) and black bean hummus
Apple slices with peanut butter
Fruit Kabobs (chunks of frozen bananas, peaches, blueberries, etc. on a skewer)
Applesauce with cinnamon and toast strips
Whole wheat pita stuffed with favorite veggies and drizzled with olive oil, vinegar, and spices
Frozen fruit juice popsicles
Granola Bars crumbled on top of non-dairy yogurt
Puffed kamut or rice with a handful of raisins and a handful of sunflower seeds
Tortillas with tomato sauce and favorite veggies
Frozen Grapes (try using 3 or 4 different kinds served together for variety)
Rice Cakes topped with bean spread or fruit and a smidge of agave nectar
Simple Snack Recipes
Salsa Delight
Puree 1 ½ cups of rice and 1 ½ cups of beans with ¼ cup of oil and your favorite spices (like chili powder, coriander, and paprika).
Spread puree in a thin layer on a baking sheet.
Top with salsa and bake at 300 degrees for 1 hour.
Cut into slices and eat as your would pizza.
Flax Crackers with toppings like spaghetti sauce or seed paste.
For a basic flax cracker, grind a cup and a half of flax seeds, add a seasonings of choice, and then add a ¼ cup of water, a ¼ cup of olive oil, and a handful of sprouted or cooked grain of choice (quinoa is very good with these.)
Mix thoroughly in a food processor and spread evenly on a Teflex sheet in the dehydrator.
Dehydrate at 105 degrees for 4-8 hours, then flip onto tray, removing Teflex and dehydrate another 12 hours.
Cut into desired sizes and enjoy.
Favorite vegan pancakes with different dips (fruit spread, almond butter, etc.)
For a simple, delicious pancake recipe, beat the following in a large bowl: 1 cup of whole wheat flour, 1 cup of oat or buckwheat flour, ¼ cup of ground golden flaxseeds, 1 heaping Tb. Of baking powder, ¼ tsp salt, 1 cup of favorite non-diary milk, ½ cup applesauce, ½ cup water, and ¼ cup of oil.
Add a few handfuls of blueberries if desired.
Pour a little batter onto hot frying pan and cook about 2 or 3 minutes on each side.
Kids love to participate in making this one.
Sea Roll-Ups
Spread hummus on a sheet of nori and top it with a thin layer of rice. Roll up and serve with your favorite savory dip
Peanut Butter Balls
Mix one part peanut butter, one part oat flour, and one part agave nectar.
Mix in some puffed rice or dried fruits of choice.
Form into balls (add some wheat germ to stiffen the dough if necessary) and refrigerate for an hour. Very appetizing and addicting!
