Vegans with a sweet tooth will just love these quick and easy nutty chocolate chip cookies.

Everybody loves chocolate chip cookies, and just because you’re vegan doesn’t mean you have to miss out on one of life’s greatest pleasures. Here’s a quick recipe for very tasty vegan chocolate chip cookies that’s simple to make and doesn’t require a lot of exotic ingredients.

Vegan Nutty Chocolate Chip Cookie Recipe

Yield: approximately three dozen cookies about 2 – 2 ½ inches in diameter

Preparation Time: 30 minutes or less

Ingredients:

  • 3/4 cup soy margarine
  • 1/3 cup sugar
  • 3/4 cup packed brown sugar
  • 2 teaspoons vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 cup crushed or slivered almonds
  • 2 cups semi-sweet chocolate chips
  • 1/4 cup warm water

Directions:

Before you get started, make sure you’re using vegan sugar, margarine and chocolate chips. These ingredients are commonly found in grocery stores. White flour is considered vegan, but white sugar often is bleached using animal bone char, so be sure to use unbleached, fine grain cane sugar. There are a number of soy margarines on the market, and ‘fake’ chocolate chips can be found in bulk food stores as well as supermarkets.

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mix sugars, vanilla and margarine in a large bowl.
  3. Mix flour, baking soda and salt together in separate bowl. Be sure to combine the ingredients well.
  4. Add the dry mixture to the wet mixture. You can add a little more warm water if the batter seems too dry or a touch more flour if it seems too wet.
  5. When the batter is thoroughly mixed, fold in the nuts and chocolate chips.
  6. Drop the batter by the spoonful onto a non-greased cookie sheet.
  7. Bake for 10-12 minutes, depending on your oven.

Note: They’re ready when they begin to turn a light brown, which happens pretty quickly, so you’ll want to keep an eye on them. Because of the margarine and sugar content, leaving them too long will cause the bottoms to overcook.

Variations:

This recipe works equally well without the chocolate chips. You can add more nuts to suit your taste. Any type will work as long as they’re crushed or slivered. If you have a nut allergy, or simply don’t care for nuts, you can omit them from the mix altogether, and for an extra little something to replace them, or the chocolate chips, you can add small fruit pieces, such as diced apples or dried apricot bits.

Whichever variation you decide on, you’ll have a decadent treat that even your non-vegan friends will find irresistible.
