Meatless Burgers

There are many different brands of meatless burgers in local supermarkets. Similar to peanut butter and jelly, meatless burgers is a very convenient lunch. Some options are soy burgers, vegetable patties, and mock chicken patties. Garnish these burgers with vegan mayonnaise, mustard, pickles, onions, lettuce and tomato for a more filling lunch.

Lettuce Wraps

Lettuce wraps are big pieces of lettuce that are filled with various vegetables and they are dipped in a sauce. Similar to salad, this lunch option has several varieties. For example, wrap raw green peppers, tomatoes, garlic, and cucumbers in lettuce and dip in hummus. Another type of lettuce wrap is beans, tomatoes, chili powder, and vegan cheese dipped in salsa.

Falafel and Hummus

Burritos

There are many different kinds of vegan burritos that can be bought from the frozen food section in a supermarket. This is a good option for lunch if time is limited because the burrito can be heated in a microwave. If time at lunch is not limited, make a burrito from scratch. Options for homemade burritos include lettuce, tomatoes or salsa, vegan sour cream, vegan cheese, seasoned rice, and sautéed onions, mushrooms, and green peppers.
