Volcano Cake: An Egg & Dairy Free Dessert Delight

Not a traditional cake. This dessert forms it's own hot fudge sauce and is best served warm.

This dessert is a copycat version of the famous "Molten Lava Cakes" served at many popular dining establishments. It is a great finale to a fancy or everyday meal. This also works as an easy egg free alternative to the birthday cake or for family get togethers.

Tasty Vegan Desserts

Hot Fudge cake is easier to create than most traditional cakes. As a bonus, guests will not suspect it is egg free, so this works great for dinner parties for non-vegan friends. Introducing your friends and family to the tasty world of vegan cooking has never been easier or tastier!

Children also enjoy this recipe, especially when it is called "Volcano Cakes". Your children's friends will enjoy this dessert at sleepovers or parties.

Step One:

  • 3/4 unbleached flour
  • 1/4 cup cocoa
  • 2/3 cup vegan granulated cane sugar
  • 11/2 teaspoons baking powder

Combine the above ingredients in un-greased 8-inch metal or glass baking pan.

Step Two:

  • 3 Tablespoons canola oil
  • 1/2 cup milk substitute, room temperature

Add canola oil and milk substiute to the pan, and mix well.

Step Three: (Hot Fudge Sauce)

  • 1 1/4 cups boiling water
  • 1/4 cup cocoa
  • 2/3 cup vegan light brown sugar
  • 1 teaspoon vanilla extract

In a separate container, combine above ingredients and stir until sugar and cocoa are dissolved. Pour hot mixture over pan contents. Do not stir.

Step Four: (Optional)

  • 1/4-cup vegan chocolate chips

Sprinkle chocolate chips over top of ingredients. Bake at 350 degrees for 30 minutes, or until surface appears dry. Serve warm or cool.

Switch it Up

  • Add marshmallows or safe ground nuts for a twist on this easy to bake dessert. This makes a unique rocky road type brownie.
  • Another option, soften a quart of vanilla ice cream until soft enough to evenly spread in an identical 8 inch baking pan that has been lined with waxed paper. Spread the ice cream in the pan to cover the entire surface and create a flat surface using an icing spreader or spatula. Return to the freezer for one hour. Invert pan on large plate or baking sheet to remove the ice cream, peel the wax paper from the ice cream. Cut into squares the same size as the cake squares you will be cutting. Carefully top ice cream squares with the cake.
  • Peppermint flavored chocolate chips will create a "grasshopper" flavor hot fudge cake.
  • Drizzle warm caramel syrup over the cake before serving.
  • Serve on a plate that has been sprinkled with vegan confectioner's sugar.
  • Sprinkle with jimmies or other crushed candies.
