Raw Vegan desserts have never been easier. This delectable pie is a whole food delight. Its rich, chewy flavor will satisfy nearly any sweet tooth.

Every experienced raw fooder knows that they don't have to give up incredibly delicious treats when they make the commitment to raw foodism. Fruits and nuts are nature's gift and they can be combined in ways that please even the most finicky of eaters.

The beauty of this Blueberry Strawberry Pie is it's simplicity in ingredients and in preparation. This is a five ingredient pie consisting of items that can be purchased nearly anywhere. Each element adds powerful nutritional components to the pie.

Almonds are packed with protein and phytochemicals. They are anti-inflammatory and also contains loads of fiber, zinc, vitamin E, calcium, fiber, and folic acid. They are very versatile and help make the crust of this pie chewy and rich.

Dates are a very good source of vitamin C and contain over 20 amino acids. They help hold the crust together and give it depth and sweetness.

Agave nectar is a sap extracted from blue agave cactus plants in Mexico. There, it is known as "honey water." It tastes much like honey, but is fortunately, low on the glycemic index.

Try the following pie the next time a craving for a new raw treat hits:

Raw Vegan Blueberry Strawberry Pie

Ingredients

  • 1 3/4 cups of ground almonds
  • 6 dates, pitted and chopped
  • 1/4 cup plus 2Tb. agave nectar, separated
  • 2 cups strawberries
  • 1 cup blueberries

Directions:

  1. Mix almonds, dates, and 2 Tb. of agave nectar in a food processor until fully incorporated. It should form a ball.
  2. Press the almond mixture on the bottom of a pie plate.
  3. Mix the remaining agave nectar, the blueberries, and the strawberries until combined.
  4. Pour the berry mixture into the pie crust and freeze for one hour.
  5. Take the pie out of the freezer and let it thaw a few minutes. Cut into slices, and enjoy.

This is a very versatile dish. Almost any fruit can be substituted for the berries. Bananas and raisins work well. Chopped apples and cinnamon are tasty, too.

A "cream" version of this pie can be made by simply putting the fruit mixture into the food processor and thoroughly blend it, along with 1/2 cup of cashews. Then pour into the pie dish and freeze as directed. It can be garnished with berries and a mint leaf.

Raw cacao is a very interesting ingredient to add to the mix if a little comfort food is desired. Simply add 2 tsp. of ground raw cacao to the crust dough, for a rich chocolate flavor.

This delicious raw vegan Blueberry Strawberry Pie can be enjoyed by adults and children, vegans and non-vegans alike. Its ease in preparation and sweet chewy texture guarantee it to be an instant summer classic dessert.
