Vegan Chocolate Spice Bars: Christmas Desserts

Blending Chocolate with Flavours of the Holiday Season

Three delicious recipes which combine dark chocolate with seasonal spices and flavours.

If you love chocolate and want to find ways to incorporate it into holiday-flavoured desserts, the following three recipes are perfect for you. Each of these delectable treats combines chocolate with something spicy or sweet. On top of everything, they are all vegan (that is, free of dairy and eggs), so they’re a healthier choice than most other Christmas desserts. Dig in!

Vegan Chocolate Spice Bars

Ingredients:

  • 3 Oz. Dairy-Free Dark Chocolate
  • ¾ C Vegan Margarine (Softened)
  • 1 ½ C Brown Sugar
  • 3 “Eggs” (Recommended: Ener-G Egg Replacer)
  • 2 Tsp. Vanilla Extract
  • ¾ C Flour
  • 1 Tsp. Ground Cinnamon
  • 1/8 Tsp. Ground Nutmeg
  • 1/8 Tsp. Ground Cloves
  • 1/8 Tsp. Salt
  • Organic Powdered Sugar

Method:

  1. Melt the dark chocolate using either a double boiler or the microwave (depending on your resources).
  2. Blend the margarine, brown sugar, “eggs,” and vanilla on high until creamy. Add in the melted chocolate and blend well.
  3. In a separate bowl, combine all of the dry ingredients – the flour and the spices. Slowly add them in to the blended mixture and mix on a low speed until everything is well combined.
  4. Pour into a shallow, lightly greased baking pan and bake at 375°F for 25-30 minutes. Sprinkle with powdered sugar. Cool in pan before removing and cutting into bars. Enjoy!

Vegan Chocolate Orange Squares

Ingredients:

  • ½ C Vegan Margarine
  • 125 Grams Vegan Cream Cheese (Recommended: Tofutti Better Than Cream Cheese)
  • ½ C Organic Powdered Sugar
  • 1 “Egg”
  • 2 Tbsp. Orange Rind
  • 1 Tsp. Vanilla Extract
  • 1 C Flour
  • ½ Tsp. Salt
  • 1 C Dairy-Free Dark Chocolate Chips

Method:

  1. Blend margarine and cream cheese on high until light and creamy. Add in the sugar and “egg”, followed by the orange rind and vanilla extract, blending well.
  2. Using a spoon, mix in the flour, salt, and chocolate chips and stir until well combined.
  3. Pour into a lightly greased 9 x 9 baking pan and bake at 350°F for 30 minutes. Cool slightly before cutting, but feel free to serve warm and gooey!

Vegan Chocolate Ginger Cookies

Ingredients:

  • 2 ¼ C Flour
  • ¾ C Cocoa Powder
  • 1 Tsp. Baking Soda
  • ½ Tsp. Baking Powder
  • ¼ Tsp. Salt
  • 1 ½ Tsp. Ground Ginger
  • 1 Tsp. All-Spice
  • ¼ Tsp Ground Cardamom
  • 1 C Brown Sugar
  • ½ C Vegan Margarine
  • ½ C Light Molasses
  • 1 “Egg”
  • ½ Tsp. Vanilla Extract

Method:

  1. In one bowl, blend the brown sugar, margarine, molasses, “egg,” and vanilla extract on high until creamy. In a separate bowl, combine the remaining dry ingredients.
  2. Add the dry ingredients slowly into the wet ingredients and mix well with a spoon until well combined. Cover in plastic wrap and put bowl into the freezer for approx. 20 minutes.
  3. Once the dough is chilled, form small balls of dough and then flatten with the back of a spoon on a lightly greased cookie sheet. Bake at 350°F for 8-10 minutes. Remove from cookie sheet and cool on a rack. Enjoy!
